We use chia seeds (Salvia Hispanica) for texture and nutritional reasons. Chia seeds are rich in Omega-3 fatty acids, vitamins, minerals and fiber.
From what we have read, chia seeds used for chia pets and chia seeds used for cooking/baking are the same.

Raw sugar is less refined and still has some nutrients in it and therefore, better for us than refined. It is better for the environment because less energy is used in processing it. It has the same glycemic load as refined sugar.

We use organic blue agave nectar, an all-natural, organic, low-glycemic index sweetener derived from the Blue Agave cactus for many of our baked goods. It is commonly safe for type 2 diabetics with non-insulin dependency (however, please check with your physician).

Blue Agave Nectar is what we use.
We try to use whole grain* flours as much as possible but sometimes they need a little help to make the product more tasty. We currently use almond flour, arrowroot, brown rice flour, coconut flour, potato starch, sorghum flour, sweet brown rice flour, and tapioca flour.
*Not all of our flours are considered grains.
We use two types of oil: canola oil and organic, cold pressed, extra virgin coconut oil.

We do not currently add soy or dairy to any of our products. We could not find chocolate chips that fit our criteria; so we make our own chocolate chunks for our chocolate chunk cookies to avoid soy, dairy, and sugar.
We use "If You Care" baking cups for our mini-loaf breads and brownies because they are unbleached and better for the environment - they are also better than colored baking cups because they do not contain artificial colors (therefore, they are safer for people with allergies).
